Sambar is a popular south Indian stew made of pulses and vegetables. It goes well with breakfast items such as Ven pongal Idlis, Dosa and for lunch with Rice. The vegetables you use to make adds unique taste to the Sambar.  There are lot of Sambar varieties based on vegetables.  A good Sambar powder adds taste to the dish.  I usually make my own Sambar powder. I will later post how to make a good Sambar powder in home.
