    Preparation Of Ingredients

    Peel the skin of Ridge gourd and cut into the small pieces. Chop the Onions and Garlic Cloves. Have the spices powder ready.

    Heat some oil in a pan. Add Mustard seeds, Urad dal, Curry leaves to it and when they start spluttering add chopped Onion, Green Chilli, Garlic gloves and saute it well until the Onions are cooked. Then add Ridge Gourd, Salt and mix it well.

    Since ridge gourd is rich in water stir it continuously in high flame to lose the water released from it. When it is half cooked add the spices powders and mix it well. Saute it until this mixture gets a thick consistency then turn the flame into simmer and cook 5 mins.
