1/4 kg Goat liver
10 Small onion
3 big size Garlic cloves
small piece Ginger
3/4 teaspoon Cumin seeds
1 teaspoon Pepper
Curry leaves
4 lenthy pieces Coconut Pieces
3 Red Chilli
1/2 teaspoon Curry Powder Kulambu milagai thool

This Goat Liver Fry (Mutton liver fry) recipe is one of the famous dish in our village side. For this recipe we are going to prepare the masala instead of going for the ones available in the market. This adds more flavor and rich taste to the dish and it will remove the raw smell from the liver. We usually have it with Dosa and Coconut chutney for breakfast.

Preparing the ingredients

Wash and cut the liver into small pieces. I mostly use the kitchen scissors for cutting meat and fish.
Cut the Small onion or Shallots, Curry leaves, Curry powder, Red Chilli and keep it ready

Preparing the masala

Add Cumin seeds, Garlic cloves, Pepper corns, Ginger, Coconut pieces to a blender and grind it well. (Don't add water).

Heat the pan, add Seasame oil, Mustard seeds, Curry leaves. While mustard seeds starts spluttering add the liver pieces,Salt and stir for 2 mins. Then add the Onion, Red chilli and fry it until onion slightly cooked.

Add the grounded masala, Curry powder (Kulambu milagai thool) and mix it well. Saute for 2 mins until the masala become half cooked. Then cover with it with a lid after 5 mins and cook it in simmer. It is important that while at simmer open the lid and stir it often, otherwise it will get burnt and stick to the vessel.

All the water should have gone by now. Continue for one more minute in simmer which will make the remaining moisture to evaporate from the liver and it will mix with the masala. This will help remove the raw smell from the dish. Finally add the chopped Coriander leave to it.
